Chicken Dijon

Ingredients:

4 Chicken Breasts (Boned, Skinned and Halved)
3 tbsp Dijon Mustard
Cooking Spray
¼ Cup of Fine Dry Bread Crumbs
¼ Cup of Evaporated Milk
¼ Cup of Grated Parmesan Cheese

Instructions:

Preheat the oven to 475F and spray an appropriately sized baking dish with the cooking spray. Add the mustard and evaporated milk into a shallow bowl. Using another bowl, add the parmesan cheese and the breadcrumbs. Dunk the chicken into the milk bowl, coating completely, and then into the breadcrumbs until the chicken is coated thoroughly. Put the chicken breasts onto the baking dish and bake at 170F for around 20 minutes until the chicken is done.
